FLAT FISH!

ok, SO IT'S 8:20 AM AND SUNNY and Rosie is at work, Sadie is looking out the patio sliding glass doors and kitties are lounging.






Rosie and I went fishing under the first bridge on Dunedin Causeway. The little nippers took all our frozen shrimp, until a leaving guy gave us some live shrimp and frozen calamari. The live shrimp got some hits but the calamari yielded three pinfish for Rick and one small jack for Rosie.. Rick caught a nice flounder on the smallest live pinfish but when it broke water he couldn't get it up on the seawall as it slipped off the hook, oh well. We gave the jack to a friendly negro boy or girl (couldn't tell which) who was fishing next to us with two negro women. Closed out the afternoon with burgers and PBR's at Hooter's Island Bar and Grill on the Patio in Palm Harbor. And watched Bogart and Astor and Greenstreet and Lorre in The Maltese Falcon when we got home...


Saturday night we had a couple over for dinner and drinks and the wife, who is Chinese, brought a bottle of NUOC MAM NHI which is Thai fish sauce, very strong, made from anchovies. There is a phenomenon that occurs in my life where odd things occur in threes, maybe there's a name for it, I know I made one up once,but I've forgotten it. It's where esoteric related things suddenly crop up-- I hadn't thought of the Nuoc Mam for many years, but at the Flea market the other day, an Asian woman had a tiny littLE shop; She looked Vietnamese to me, I asked her if she had any Nuoc Mam, and she did and I got a bottle for 99 cents,

wait--the hooch maids in Cochin-Chine used to store their lunch "Nook-mom" under my rack--they explained to me that it was fermented rotten fish...then several days later Rosie's Friend shows up with a bottle of it! Will we encounter it a third time??? Our guest cooked a wonderful ricenoodle with shrimp and beef dish and Rosie


(paragraph too long) cooked a beer can chicken on the gas grill and we drank corona's and played a game I made up: I read a quote from a list of 100 top movie quotes and you must guess or staste the name of the actor and character that said it and the movie. If nobody knows the name of the movie, I act it out as in charades. This game I made up0 on the spot. What should I call it? No. ONe on the list is easy:

Surprisingly6 many people Can quote what Scarlott's question is that this is the answer to, and her answer to it as well, as Rhett walks off in the Fog.


Speaking of Walking off in the fog at the end of a pic, I showed Rosie Casablanca the other night, she'd never seen it...

Nước chấm, also known as nước mắm pha, refers to a variety of Vietnamese "dipping sauces" that are served quite frequently as condiments. The consistency is close to water, and is clear, with an orangey-brown color to it. A common recipe is:

To this, people will typically add minced garlic, chopped or minced serrano peppers, and in some instances, shredded carrot, etc.

It is often prepared hot on a stove to melt the sugar more quickly, then cooled. The flavor varies depending on the individual's preference of putting in more of a certain ingredient, but is generally is described as pungent and distinct, sweet yet sour, and sometimes hot.

Nước chấm is typically served with:

  • Cơm tấm, or "Broken rice".
  • Chả giò, also known as Imperial rolls, sometimes mistaken as either egg rolls or spring roll(s).
  • Gỏi cuốn, which are sometimes called shrimp salad rolls or referred to erroneously as "Rice paper Rolls," a.k.a. springroll(s). (Alternately, gỏi cuốn are served with peanut sauce or hoisin sauce.)
  • Bánh xèo, a crepe made out of rice flour and coconut milk, pan-fried like American omelette but stuffed with pork, shrimp, and bean sprouts.
  • Bánh hỏi, very thin vermicelli that has been layered into sheets, and separated by thin layers of mo hanh (scallions in oil)

Watched #1 Gators girls Softball lose first game of World Series last night...on ESPN
